Almond Chicken

The benefit of almonds is plentiful but the taste of it is the best! This recipe has a great nutty flavor and it only takes 30 minutes to make.


Serves 4

  • Light coconut milk – 1/2 cup for the marination and 2 tablespoons for the sauce
  • Fresh lime juice – 2 tsp for the marination and 2 tsp for the sauce
  • 1 tbsp dark brown sugar
  • 1 tsp rice vinegar
  • 2 tsp shredded fresh ginger
  • 2 garlic cloves, crushed
  • 1 pound skinless, boneless chicken breast halves, cut into 24 slices
  • 1/3 cup water
  • 2 tbsp almond butter
  • 1 tbsp hoisin sauce
  • 3/4 tsp Sriracha
  • Sesame oil
  • 24 cucumber slices


  1. Mix the lime, coconut milk, ginger, garlic, rice vinegar, and brown sugar in a ziplock bag
  2. Add the chicken and mix well with the marination. Marinate for at least 2 hours
  3. For the sauce, heat a pan and add water. Then add all the other ingredients, almond butter, Hoisin sauce, Sriracha and the rest of the coconut milk and lime juice  to the water and bring to a boil for about 1 minute until the sauce thickens
  4. Heat another pan and add 1 tbsp sesame oil, fry the chicken for about 5 minutes until it’s cooked through
  5. Serve and enjoy
