Butternut Squash side dish

This colorful recipe will give you a great addition in your fiber intake. Quite frankly I was never a big fan of butternut squash until I started using spiralizing them. It’s funny how the texture of food make all the difference! This recipe is very low in calories and it’s a great side dish to serve with for instance our turkey meatloaf recipe:  http://www.healthystar.tv/turkey-meatloaf/


Serves two

  • 1/2 medium butternut squash
  • 1 small zucchini squash
  • 1 small garlic chopped really small
  • 1 small shallot
  • 2 tbsp tarragon
  • 1/3 lemon squeezed
  • 1/4 cup Parmigiano cheese
  • 2 tbsp olive oil
  • 1 tsp sea salt


  1. Spiralize the butternut squash and the zucchini squash
  2. Heat the pan and add the spiralized butternut squash and the zucchini squash
  3. Add the shallots, garlic and sauté for about 7 minutes
  4. Add some olive oil and tarragon. Leave some tarragon for garnish
  5. Once it’s cooked add some sea salt cheese and the rest of the tarragon
  6. Squeeze some lemon on top
  7. Serve and enjoy 🙂
