Loaded with essential nutrients that could have important benefits for both body and brain, chia seeds are some of the healthiest foods you can find (see more here). In this recipe that is inspired by Jamie Oliver, you’ll find lots of good fats from nuts and seeds.
It’s also a good treat for those of you that have a sweet tooth and want something that could replace your M&M cravings with better nutrients. These energy bars are tasty, have crunchy feeling and are sweet enough to handle your sugar cravings. It can also last you for some time if you freeze it (and don’t eat them all at once!) :).
- 1/2 cup raw cashews
- 1/2 cup Goji berries
- 1/2 cup Raw pecans
- 1/4 cup flax seeds
- 1/4 cup chia seeds
- 8 dates
- 1 cup rolled oats
- 2 tbsp maple syrup
- 2 tbsp walnut oil
- Mix the cashews, berries, pecans, flax seeds, chia seeds and dates until they have a sticky texture that keeps them together
- Add the rolled oats maple syrup and walnut oil and mix well again
- Flatten the mixture and cut into serving portions
- Serve and enjoy!
After having some treats, keep them in the fridge. Or if you want to make a larger batch at once you can freeze them up to 3 months
