Gyro Healthy Way

A gyro is a greek dish, made of meat cooked on a vertical rotisserie. In this recipe, I am making it vegetarian. It gives more options to people who really wants to try this dish out but don’t want to have meat.

Ingredients:

Serves 2

  • 1 zucchini squash
  • 1 small onion
  • 1 yellow bell pepper
  • 1 red bell pepper
  • 2 tbs olive oil
  • 2 tsp chili powder
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp salt
  • 1/3 cup water
  • 1/3 cup cucumbers peeled and chopped

For the sauce:

  • 1/2 cup greek yogurt
  • 1 garlic clove
  • 1 tsp sea salt
  • 1 tsp dry or fresh mint
  • 1 tsp fresh squeezed lemon

Directions:

  1. Make the dressing for the vegetables ready first. Combine the cumin, chili powder, salt, oregano and olive oil altogether and mix well.
  2. Bake the veggies for about 7 to 10 minutes
  3. For the sauce put the greek yogurt, water, garlic, mint, lemon in a blender, and blend well
  4. Serve the veggies in a whole wheat bread pita and add the sauce to it.
  5. Serve and enjoy 🙂
