If you have kids, you may relate to a problem I have. My kids can be really picky eaters(!), especially when it comes to eating their veggies. My son literally hates vegetables. Unfortunately I’m not exaggerating here. He wants nothing to do with them. But what I’ve found is that it sometimes is more a matter of texture than taste.
So smoothies ave become my golden key to getting all what I want in his mouth. At first he wasn’t sure whether he wanted them or not. But once I started freezing the smoothies, and it looked like a yummy ice cream or popsicle the problem was instantly gone! :).
Here is an easy recipe that my son even helped making it with me. It is super simple and so yummy.
Serves 4 popsicles
- 1/2 ripe banana
- 1 cup spinach
- 1/2 avocado
- 1/2 cup coconut milk
- 1 cup pineapple “sweet”
- 1 tsp chia seeds
- 1 tsp unsweetened coconut shred
- Mix all the ingredients and blend well until it’s smooth
- Pick a mold that your kids like pour the smoothie in the molds and freeze overnight
- These molds are so easy to use your child can easily open it himself
- Enjoy the cold pop 🙂
