Indian Vegetarian Gourmet

I always feel great after eating vegetarian meals. Not only do they make me more energetic, they also make me feel lighter. However, I struggle with how plain and boring many vegetarian meals are. So here’s an amazing vegetarian recipe, loaded with great spices and flavors.

It’s a recipe greatly inspired by super chef Jamie Oliver. What I love about him is that he always finds these excellent flavors and that he bring them to our kitchen with both simplicity and richness. Enjoy!

Ingredients

Serves 2

  • 1 cauliflower head
  • 1 can garbanzo beans
  • 1/2 cup pineapple
  • 1 tsp fennel seeds
  • 1 tsp yellow mustard seeds
  • 2 tbsp almonds
  • 1 tbsp olive oil
  • 1/2 tsp ground turmeric
  • 1/2 tsp curry powder
  • a bunch of cilantro
  • 4 oz of plain yogurt
  • 1 tbsp ginger root peeled and cut
  • 1/2 lemon
  • 1 tbsp mango chutney
  • 1 fresh jalapenos
  • 1 tbsp sriracha sauce

Directions

  1. Preheat the oven to 400°F
  2. Chop the cauliflower and remove the green outer leaves and boil for 5 minutes
  3. Place baking sheet on a large pan and put the cauliflower, pineapple, fennel seeds and yellow mustard seed
  4. Roast in the oven for 20 minutes, once you take them out add the almonds and garbanzo beans place it back in the oven and roast for another 7 minutes
  5. While you are waiting on your veggies to roast, toast the turmeric and curry powder on medium heat
  6. Mix the yogurt, mango chutney, ginger root, cilantro, toasted curry mix and lemon in a mixer until the sauce thickens
  7. Add the sauce first and top the cauliflower mix on top of the sauce. At the end, add some cilantro for flavor and the jalapeños for a spicy taste
  8. For extra spice I added Sriracha sauce. It gave it an amazing kick! 🙂
  9. Serve and enjoy
