Quinoa Mango Salad

Hello summer! Or am I too early? Anyways, this bowl contains a great summer combination. It’s a recipe for a lazy day. In fact, I prepare all these ingredients the night ahead. And when it’s time for lunch I just mix everything together, and have a healthy tasty meal without putting much effort into it.

Ingredients

Serves 2

  • 1 cup chopped bacon
  • 1/2 cup onions onions
  • 1 clove chopped garlic
  • 1 cup cooked quinoa
  • 1/2 cup chopped  mango
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped red pepper
  • 1 tsp lemon
  • 2 tbsp olive oil
  • 1 tsp himalayan salt
  • 2 tsp apple cider vinegar
  • 1 tsp black pepper
  • 1 tbsp low fat feta cheese

Directions

  1. Sauté the bacon, onions, and garlic on medium heat for about 7 minutes, until it’s cooked and golden brown
  2. Grill the corn
  3. In a serving bowl, mix the quinoa, mango, grilled corn, red pepper, cilantro, bacon mix, olive oil, lemon and apple cider vinegar all together
  4. You can serve this as a side dish or alone as a lunch salad. Serve and enjoy 🙂
