Salmon Burger

These salmon burgers are easy to make and end up both juicy and delicious. More so, many people find them an especially good menu item when trying to limit their meat intake, for instance during Lent season or on meat-free Friday’s.

Serves 4

For the Salmon burger :

  • 1 lbs wild-caught salmon finely chopped
  • 2 tbsp chopped shallots
  • 1 jalapeño, seeds removed
  • 2 tbsp chopped fresh cilantro
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 2 tsp ground turmeric
  • 1 egg beaten
  • 6 tbsp Panko bread crumbs
  • 2 cups spinach
  • 1 tbsp coconut oil

For the salsa:

  • 2 avocados
  • 2 tbsp red onion
  • 2 tbsp rice vinegar

  1. Mix all the ingredients for the salmon burger except the spinach
  2. Use a non sticking pan and heat the coconut oil on medium heat. Add the burgers and sauté for 8 minutes – 4 minutes on each side
  3. For the salsa mix the avocados, red onions and rice vinegar
  4. Serve with spinach and top the burgers with salsa. If you like to have bread use a whole wheat bun.
  5. Serve and enjoy 🙂
