Vegetarian Omelette with home made Salsa

How about if I gave you a breakfast recipe so good that it will give you the desire to leave your warm bed in the morning? Today’s recipe might just give you enough inspiration to get your body unglued from the sheets! 😉

For starters, I love starting the day with eggs and especially so if I’ve worked out in the morning. However, no matter how filling eggs are, they simply aren’t exciting enough to leave a desire to jump out of the bed in the mornings. But then I started adding sweet potatoes and salsa and now even the cloudiest morning can look bright, filled with both sweetness and zing!

Ingredients

This recipe serves one.

  • 2 eggs
  • 1 tbsp butter
  • 1/4 cup sweet potatoes
  • 1/4 cup yellow peppers
  • 2 Tbsp red onions
  • pinch of salt
  • one tsp dry chili
  • 1/4 cup arugula

for the sauce:

  • 1 fresh tomato
  • 2 tsp tabasco sauce
  • 1 tbsp crème fraîche

Directions

  1. Melt the butter on a medium heat
  2. Add the sweet potatoes. It usually takes about 7 minutes for them to cook
  3. Add the yellow peppers and sauté for about 3 minutes, then add the red onions and sauté for another 3 minutes
  4. Add the eggs and cook for about 3 to 4 minutes
  5. For the sauce add the tomatoes chili, tabasco sauce and crème fraîche. Mix well until you get a creamy texture
  6. Top the omelette with arugula and the tabasco sauce
  7. Serve and enjoy
